Lunch Surprise at Adelaide Central Market

It's shopping day at the Adelaide Central Market (ACM). We've planned to have lunch at Revolution Mexicana ADL. 

Mole enchiladas were on the menu before the COVID shutdown. Since reopening, Fernando has been unable to acquire the proper ingredients. A few weeks ago he special ordered some for us to get CJ off his back. CJ had been harassing him for mole once or twice a week. Fernando informed us that if we showed up the following Wednesday he'd have some for us, and he did.

It's now weeks later and we've not pestered him since. Carol is about to order her usual fish tacos and CJ is attempting to choose between huevos rancheros and a beef burrito when Fernando gets Carols attention. We are about to order from the menu when Fernando mouths the word "mole" to Carol so that only she can see. Carol gets CJ's attention and we nod and hold up two fingers indicating we each want an order. 

Why the secrecy? It's not on the menu and available to the general public.  In fact, it's not available to many of Fernando's regulars and on any given day, half the restaurant are regular repeat customers that he knows by name. His ability to prepare it is limited and he offers it only to regular customer that have previously pined for it.

We have recently made another discovery. Previously, CJ had Negro Modelo to drink and Carol had Fernando prepare a custom low sugar margarita. A few weeks ago we discovered his ever changing homemade non-alcoholic drinks. Today he's offering a strawberry lime drink.  Why no coconut today? Because and he strolled the ACM this morning, the strawberry were too good to pass.

Mole: from Nahuatl mōlli, "sauce", is a reflection of all the cultures that have collided to form what Mexico is: the indigenous people who occupied the land first, the European invaders who forced their way in, immigrants from the Middle East and Asia. With as many as 30 ingredients, there are so many varieties with so many ingredients in so many interpretations across Mexico, that it’s hard to count them all. Here at Revolucion Mexicana, using heart and theory, we have narrowed it to 20 ingredients, based on the famous semisweet Mole Poblano, and we believe the result is spectacular, like a declaration of principles, the ultimate statement on our food. Whether with chicken or vegetarian, this dish will transport you to the core of Mexican culture..

The mole is superb!
